Okay, first off, I'm not even sure what the definition of "deep tracks" even is. But from what I've read on a friend of a friend's post on farcebook, it means a song on an album that is a favorite of everyone who owns that particular album, but never quite made it onto the radio, or MTV, or whatever the hip thing is right now (omg I said "hip").
Anyhoo, after reading through the previous replies, I added Fleetwood Mac's "Hypnotized", an absolutely magical track that no one's heard of (this is pre-Buckingham/Nicks):

So deep a cut the track didn't even make the album. It's merely a bonus track. And I only found it as an MP3, but maybe it's on a CD somewhere. The flute doesn't come in until just after the 2:00 minute mark. But the whole song is excellent.

I'm currently watching Paul McCartney's Rockshow, and it made me think of this tune:

This is my favorite Paul McCartney song ever, nothing else is close (video is pretty cheesy). It features bagpipes, also cheesy anywhere else but here it makes the hairs on my arms stand up. For a time, it was the most popular song in Great Britain, ever. Yet, most people in the US haven't heard of it. I actually convinced a few country bands I was in in Ohio to play it, and it was vastly popular with the dancers, even though they'd never heard it before.

Probably the most underrated track on that album, if not their whole catalog. Excellent choice Heeman.
