Little fun fact, Simon is left-handed but plays a right handed kit and leads with his right foot, like a right-handed drummer. Basically, he forced himself to be ambidextrous which allows him more flexibility to play what he can imagine.
I see videos from shows like that and wonder why I can never find a show like that to attend.

I did not know that.
When I inherited a fiddle I originally tried to learn to play it "left-handed", as my left hand has a slight birth defect that limits my ring finger and completely negates my pinkie; I figured that hand could hold the bow while my right hand fingered with aplomb and perfect intonation.
It didn't work. My dominant hand had to do the driving, but I eventually learned that what gets a crowd going is that shuffle-bow, not perfectly-fingered individual notes, so it worked out relatively okay in the end.
